    Flaked wheat needs to be mashed with another malt to utilize the enzymes.     Overshot gravity

    One time I made a saison closer to 8 percent when it should have been closer to 5. I tried to drink it like it was a 5 percent beer, but it made me sleep on the floor randomly when I'd had more than 2 or 3. For what it's worth it was quite delicious.

    Sam Adam's made a Braggot recently, don't know its quality though.. There is a place in Mannassas, VA that makes a braggot also, that I can attest to being pretty darned good.

    Do you strain or dump your wort into fermentor?

    I don't worry about sludge, but straining does give the impression of decent aeration. So I run my wort through a sanitized strainer and funnel into the fermentor (carboy). If I am making a lager beer, I will aerate with a stone as well. Straining also removes a lot of the hops material...
