Reusing a clearly mutated yeast -- bad idea, or terrible idea?

I've got some free time on Thursday to make some wort for a starter. Not sure how I should evaluate whether it's going to be good or gross. Just smell/taste? That does seem more likely than S-04 suddenly gaining 89% attenuation (I may be calculating that wrong for 1055 -> 1006)...

    Low mash efficiency

My first hunch would be that your grain fell through the mill mostly unmolested...

Reusing a clearly mutated yeast -- bad idea, or terrible idea?

I made a batch of pale ale early this summer that I fermented with a 3rd generation of S-04. Unlike the previous brews, where gravity went from 1053 -> 1011, this one went from 1055 -> 1006. At bottling time, I was not sure if the beer would be any good or not, so I just dumped the yeast cake...

    What are you drinking now?

HB Imperial Stout, 11%, 55 ibu, bottled early January this year. Tastes amazing, I think the key on this (see BCBS clone in Recipes section) was to keep the black malt down to 1% of the grist. Still seems a little "hot", alcohol wise, but only on the first couple of sips.

Life in a small French village for an old American

Such a cool thread, dunno how I missed it until just this evening. Thanks for the posts @corkybstewart, @An Ankoù, and everyone else! I've only been to France once, back in January 1987 (about when the rest of the world was learning just how bad the Chernobyl accident was for Europe), spent a...

What no one wants to say

I've got 3 breweries/brew-pubs within a half-hour drive, that make pretty darned good beer, and have great food, or at least decent snacks. But it's only a rare treat that I patronize any of them, because: I'm old, and mostly retired. I'd LOVE to have a beer or three and a nice lunch at your...

Missed OG mark in first all grain brew

Who'd you get your grain from? Morebeer.com is pretty notorious for barely crushing the barley. Bobby_M's brewhardware.com will give you a great crush. Maybe if you mentioned where you live, someone could recommend a good online (or maybe even local-ish) vendor. Personally, I think having my...

Need some updated info on hard seltzer

If you can keg, why not just mix up vodka + water + flavoring, and force carbonate? That would be the easiest. (Tho far less "home made by dad", obviously)

    Long fermentation

Check out this post: https://www.homebrewtalk.com/threads/life-hacks-for-homebrewers-add-yours.734361/#post-10414959 But that said, it's been 25 days, for a recipe you always (frequently?) make, and it's stopped 1 or 2 points higher than it typically does. It's almost certainly finished.

    What are you drinking now?

HB Imperial Stout (11.7% abv, 85 ibu, bottled july 2024)... Still much too bitter (for my taste), and there's not even a hint of bourbon any more 😞 Luckily, my bro-in-law loves this beer, so I know what he's getting for his birthday next month!

2 oz Four Roses Small Batch Bourbon, with an ice cube... delicious!

    What are you drinking now?

International beer day?!? Guess I'd better have one! HB pale ale, still tasting awesome (credit to some simple steps to minimize oxygen)

What I did for beer today

Meh, it's a little extra cardio -- just means I can have an extra beer!

What I did for beer today

Counted the number of hand-cranked revolutions my cereal killer mill needs, to grind up 5.75 lbs of barley. It's 362 revolutions! Also, re-brewing the peanut butter stout I made earlier this summer cuz it turned out so awesome. og: 1058, fg: 1012 64% 2-row 4% cara120 4% roast300 4% choc350 3%...

    Windows 11

man there's a buncha old nerds on this message-thread! :p Recently ditched windows 10 due to a hard drive failure (when an SSD dies, there's no warning, and then you can't even read anything from it). Anyways, been quite happy with Linux Mint / Cinnamon, and pleasantly surprised to see more...

brewing with briess dme / water considerations...

Been a long time since I used malt extract for anything other than boosting gravity for big, roasty imperial stouts. But now I'm going to brew something quick (basically a 15 minute hop tea), and the rest will all be Briess Golden Light DME (4.5 lbs), and 1 lb of LD Carlson's knockoff D-180...

What I did for beer today

Made another 3 gallon batch of a delicious cascade/citra pale ale recipe that I've been hooked on all summer.

    Peanut Butter & Jelly Beer

Like @fluketamer sez: don't try to fit chocolate AND peanut butter AND coconut into the same beer. Brewers Best Peanut Butter flavoring is awesome! I like 3 oz per 5 gallons beer. And for Coconut, I've had great results with McCormick's (spice aisle in grocery store) Coconut Extract. 1 oz (by...

    Salute from Ontario

Welcome from Minnesota! I think most people here would recommend leaving the beer in the fermenter for at least a week, to make sure that the gravity really has stopped dropping, and give the yeast a little time to clean up and drop out of suspension. I only bottle, so all I know is that if I...
