    If you are a hop head, never worry about overdoing it with hops. Especially dry hopping because you will be working with aroma, not bitterness.

    Don't rush a Kolsch (or any beer for that matter). If you're not sure, go buy a new fermenter. Good to have more around anyway, keep more things in the pipeline.
