I Want To Get Knocked Off My Seat

If you get bored with the Sunset's too-big-to-possibly-keep-all-the-draft-lines-fresh vibe, waltz down the street to Deep Ellum for some truly amazing beers with a good vibe. I live nearby in Brighton, and Deep Ellum by far over Sunset has become my local beer bar...

    Who doesnt use a hydrometer?

Yea..... I don't use one either. I keep thinking I should, and then not using it. I basically just let everything go way longer than it needs to - never a bottle bomb.

    Leinenkugel Summer Wheat

I really don't think those beers are that bad.... while I was in Germany I had a drink in a can that was half hefeweizen and half grapefruit soda ~ 2.5%abv. It was superbly delicious and refreshing! I forget the brand but it was a reputable delicious one. The Leinenkugels are the only things...

Realized I don't like the yeast I used...possible to hide esters?

dude, you haven't even tasted it yet? RDWHAHB. Don't do anything, your beer will be fine. Also, Bavarian Wheat is probably most traditional wheat-oriented yeast you would find.

Oak chips, just throw in the whisky?

What happens when you let the oak age on the whiskey for 2 months?

    Belgian/American Pale Ale

Its hard to balance high AA hops with Belgian yeast. However, I've used excessive amounts of Summit still with competition-winning results. The thing is that its really easy for the yeast character to sink into the background with the hops dominating. I wouldn't say to avoid the crazy...

    resh Northern Brewer Extracts

*Fresh! I just wanted to vouch for the quality and freshness of the NorthernBrewer.com LMEs! I just had two brews tie for 1st place in a homebrew competition - a DIPA with northern brewer pilsner LME (+Breiss pils DME) and their Summit hop pellets, and a Belgian Pale Ale with their organic...

    Raging Bitch

I just bought a 6 pack of this as a huge fan of the style and realized my Belgian Pale Ale is quite similar to this. I'm not going to say the same or that this is a clone, and I haven't been able to put my finger on it yet, though mine tastes a lil maltier. For what its worth... Fiddle Barn...

    SA latitude 48 yummy

Delicious beer - I just attended a Sam Adams brewery event which paired a ridiculous number of their beers with local foods. I also was lucky enough to do a tasting in the Barrel room with one of their brewers, which included, among other things, Lat 48 and Utopias. We asked about the hop...

    Primary in glass?

This works fine - the only reason I don't use my glass carboy for primary is its way way harder to clean primary fermentation gunk out than a bucket. But I have used it for this, and there's definitely nothing wrong with it.

Another one of those infection threads

I had a possible infection worry recently but I eventually concluded after looking through the huge infection thread and looking again closely at my stout in secondary that it was just bubbles. And then, I had a beer and stopped worrying :) Enjoy your beer!
