How can I get a Red color to my beer?

Take your normal pale ale or IPA recipe and add 2 or 3 ounces of roasted barley. You can also try adding it late in the mash as to not add much flavor, just color.

    Goose Island's Bourbon County Stout

I got to try this beer for the first time about a month ago when a relative bought me a 4-pack as a birthday present. It was the stronger 13% version. I spent about 2 hours enjoying this beer, it was quite an experience. I'm trying really hard to age the other 3 and open one each year...

I need to get a mill - any advice?

+1 for the Barley Crusher. I've got the one with the 7lb hopper and am very happy with it as well.

    What to do????

Depends... Did you do all grain or extract? Extract kit - go ahead and top off. It was designed for a specific volume. All Grain - did you check the specific gravity? let's say it's too high because you had too much evaporation, then you could top off. However if the gravity is where it...

    Howdy, question for beginner

Don't worry about the trub getting into your primary. I would, however recommend that you try to get your temp down a bit more before pitching. I think 80 is definitely on the high end. I always try to get down to 68-70 before pitching. I like to ferment Neutral yeasts at the low end of...

    Airlock question

I use starsan in my 3 piece airlocks. I always have a bunch around when I'm brewing, and if some gets sucked back into the primary it wont affect the beer.

    Thick...Syrupy...sludgy...STOUT!!! How to get it!!

you're right on track. The goal is to increase the amount of unfermentable sugars in the final beer. Maltodextrin is great for this. Flaked oats, Flaked Barley, Carapils, and Crystal malts will add body as well. Be careful with the crystal, so that you don't end up too sweet. Also make sure...

    Help with grain absorption!

Is it possible that you accidentally used 9.5 gallons of water. That would have given you absorption of almost 2 gallons (15.25lb * .13gal/lb = 1.98 gallons) to get you to the final 7.5 gallons. If you're 100% sure of the water, then I'm clueless.

    Stuck ferment?

Sounds like you just had a longer lag time than you're used to. 48 hours is way too soon to start worrying, especially since there's krausen now - it should be fine, let the yeasties do their work.

    RIS with Nottingham?

+1 to blowoff tube. I wouldn't take the chance. I pitched a robust porter (OG 1.75) onto a notty cake and almost blew the lid off of the primary. Luckily I caught it soon enough. I can't imagine the mess that would have made or how pissed SWMBO would have been...

    Aging on gelatin

I've used gelatin right in my kegs and have never noticed any off flavors, but then again my kegs don't seem to last for more than 2 months so I can't vouch for long term aging. I think your beer will be fine.

    Irish red

I can't take credit for this, but I think it turns out great. I think it really comes into its own after 2+ months of aging. Irish Red Ale 11 lb Vienna .5lb Crystal 30 .25lb Roasted Barley 1 lb Carapils 1oz Fuggles 40min 1oz East Kent Goldings 10min Mash @ 154 I've used US-04, US-05 and Notty...

    batch sparging

I vorlauf until the wort runs clear and then just let er rip. I have been between 74-77 percent on each of my last dozen brews this way using a rectangular 50qt (?) cooler with stainless braid.

    Ubermick's 4 tap keezer - YOU decide!

I mounted my love controller like in the first picture. I just think it looks so cool. I basically just wired the love in place of the freezer's thermostat - this way the interior lights still works on my freezer. Some people just splice the love controller into an extension cord so they...

    Ubermick's 4 tap keezer - YOU decide!

Keep in mind that if you have a tower, opening the lid can be a pain - and you risk damaging the the tower if you're not careful. I went with the collar, double hinged so I don't have to lift kegs over the collar if I don't want to.

    Samuel Smith's Oatmeal Stout Question?

I think you will find that a lot of us leave all beers in the primary for 3 or 4 weeks as standard procedure - I always do 4 weeks (or more). The yeast do a great job of cleaning up any by-products of fermentation. After 4 weeks, I cold crash the primary for a couple of days, then rack...

Does it matter what liquid you use in the airlock?

+1 for starsan, I've always got a ton of it around when I'm brewing.

PLEASE PLEASE help with this hop pairing

Try Willamette. I've seen many people comment on how Willamette complements or enhances cascades, plus Redhook uses this combo for their Longhammer IPA which is pretty tasty IMHO.

    Watery Beer

I would bet that this is just a case of green beer. The FG is at the low end for both styles, but not out of line. Give it another month or two and it should be fine.

    Nottingham Replacement Packets Arrived 11-12-09

I sent out 3 full and one empty packet and received 7 new ones in the mail today. I had just about given up hope of receiving these. At least now I can give notty another chance.
