    Not much man. Yeah, I'd swap them, Simcoe is an incredible aroma/flavor hop, using it as a bittering hop is a waste, IMO, unless you are doing a single hop. Just my pennies man. Edit: I want to try this one, Amarillo+Simcoe = awesome combo.

    I think it'll be sweeter than Two Hearted, that's a lot of crystal malt. I also think it'll be slightly different hop profile, since Two Hearted uses only Centennial in it. Still not a bad recipe. It should come out quite drinkable :P

    These are my noob observations: 1. Too much rye. 1-1.5 lbs. should be more than enough. 2. Regardless of whether you change the rye amount or not, you'll want to use rice hulls to prevent a stuck sparge. 1lb or so for that batch. 3. C80 is overkill, C20 and C40 would be a better choice if...

    The S-04 turned out well since Three Floyds supposedly uses an ESB strain for it, where S-04 is more English in character than -05. That said, ZD is an incredible beer, and even if all you make is a Citra Pale Ale instead of a ZD clone, you shouldn't be disappointed.
