    Once you get your system dialed in there should be no reason to make any adjustments after the boil. Use a good calculator like Beer Smith or Brewers Friend, have the correct numbers for your system, and you'll hit your numbers every time.

    You will probably want to drink it pretty quick, as using a wire strainer going into the bottling bucket probably introduced a lot of oxygen into the beer.

    I agree with thehaze, don't waste the 2oz of Mosaic at 60 min. Use a good bittering hop for your 60 min addition.

    A 10 gallon kettle is perfect for 5-5.5 gallon full volume batches. General rule of thumb with BIAB is to go double your batch size.

    Not true at all. I rarely use over 7.5 gallon, do no sparge, full volume mashes and always get 5.5 gallon in the fermenter.

    All kinds of choices out there. Citra, Mosaic, Amarillo, Cascade, the list could go on and on. Pick a few and get brewing, see what you like.

    Dry hopping and cold crashing

    CC after the 5th day. Once you drop to low temps, the oils come out of the hops much slower. I often dry hop in the keg, letting them sit for a week at room temp in the keg. Then I chill the keg and leave the hops till the keg is kicked.

    I've never used El Dorado hops, but from how they are described, I'd say no. Chinook has that unique piney, classic C hop flavor, and El Dorado seems to be more the newer fruity hops. Why not do two brews, one with just Chinook, and another just with El Dorado?

    Back to the OPs question, the only way to tell how much CO2 left in your tank is by weight. That gauge with the green and red is pretty much worthless.
