Mexican Cake clone info - directly from Westbrook Brewery

Yeah, could do that but I've always tried to stay away from adding artificial sweeteners. Anyway, I tasted a bottle today, knowing it wouldn't be carbonated much, and so far it's pretty good. The heat from the Reeper is still more noticable than I'd like but it's mellowed since bottling just 5...

Mexican Cake clone info - directly from Westbrook Brewery

I'm bottling not kegging so back sweetening isn't an option. I thought about using a half to a whole pound of lactose, but I have more or decided against it. The sample I took didn't seem thin to me, so I don't want to mess with it at this point. If anything the chocolate could "pop" a little...

Mexican Cake clone info - directly from Westbrook Brewery

I pulled a hydro sample today to see how the spices are coming along and it's ready to bottle. There's more heat from the Reeper than I want so I'm hoping that tones down over time, which it should. Otherwise, it's very close to what I recall Mexican Cake tasting like, mine might not be as...

I did mine at 325 for 15min. You may have to adjust the time depending on how much they are broken up.

The flavors are going to change a lot as this ages, mine did. At times not much toast, then too much roast and bitterness, and eventually settles into good mild flavors of roast and chocolate. I haven't sampled since adding the spices, likely will tonight and if all is good will be bottling...

For the cacao nibs make sure our roast them in the oven, you'll notice a big difference in aroma and taste. Raw, out of the container, theyre pretty bland, somewhat bitter, not much chocolate flavor. After roasting it's like eating dark chocolate just not quite as sweet. You should get the...

Forgot to mention I poured a couple shots worth of Jack Daniels over all the nibs, pepper, cinnamon, and vanilla, in hopes of ensuring there's nothing wild carrying into the fermenter. Really the vanilla ,being 40% alcohol should have done the trick, as well as the nibs coming right out of the...

Added my spices today. 2g of ground cinnamon 1/4 of a Carolina Reeper 9oz Cacao Nibs 2oz vanilla extract Had to go with vanilla extract because I thought I had beans, but apparently used all of them up. So, about 4.5-5Tbsp got me to 2oz of extract. The Reepers are DAMN hot. I think I have a...

Winter Seasonal Beer Holly (Christmas Ale)

Agreed with the statement above. You may get more aroma/flavor from the honey adding it towards the end of the initial fermentation. Typically you'd lose a lot of it because of it blowing off during fermentation, this may allow some of the volatiles to stay in the beer better.

    Bru'n Water Spreadsheet question

While everyone might not be able to have Excel, I'm guessing mainly because it's not affordable. Using Google Sheets works just as well, unless there's something in this spreadsheet that requires Excel. Could also use Open Office. I haven't played with adjusting my water because getting all...

    Bells double cream stout recipe?

Ok revival of a dead thread, bit hopefully we can get this thread moving. Tried this for the first time this year and would say it's one of the better "cream" stouts I've ever had. Bell's doesn't give much info on their site, I think the key to the mouth feel, creaminess since there's no...

Ok guys and gals, getting close to looking at bottling this up likely next weekend. I've been sampling more stouts already this year and am really debating on potentially splitting this beer up in 2-3 ways. Part of me is thinking to add cacao nibs and chocolate powder to a gallon or two...

American Porter Bee Cave Brewery Robust Porter

No reason you couldn't use a growler for the purpose of aging on chips, but given that small amount I would.knly go a few days at most. Using chips imparts flavors pretty quick and only doing a half gallon worth it won't take long to get oak into it. This beer is big enough that you should be...

American Porter Bee Cave Brewery Robust Porter

I haven't made this beer, but given that you ended up with 4.5 gallons I'm guessing that you either didn't start with enough water or boiled off more than usual. How much preboil water did you have or did you take a preboil gravity sample? As for adding water, I wouldnt, I think it will be...

Mexican Cake clone info - directly from Westbrook Brewery

Just a quick update, SG is at 1.021 or maybe 1.020, so more or less right where Westbrook's ends up. It's been about 3 weeks so I'm not really expecting it to ferment down anymore, as it stands it will 9.98% ABV which is good enough for me :) Not surprising it has some of the nice...

Burton Ale Yeast WLP023 - Big disappointment

Just some insight on the second beer I made with this yeast, the Graf. There's definitely some tart/green apple aroma, not as strong taste wise but still present. This beer is also cloudy and seems to be staying that way. The first beer, the Nugget hopped one, is still cloudy even after the...

Burton Ale Yeast WLP023 - Big disappointment

So the Imperial Stout has been fermenting for a little over 4 days now. Yesterday I had to clean the airlock and put a blowoff on, when I checked in the morning the lid was off on one side and airlock was full, temp was at 65. She push only a little bit of krausen into the blowoff tube through...

Lol, yeah I only got one pepper. I'm think of only using 1/4 to start with, if it needs more I can always add a little at a time.
