One issue with this is that you’ll be adding a lot of dissolved oxygen to your finished beer. I wouldn’t do it without a way to mitigate that. Boiling the water is good, but unless you chill it in an environment without oxygen it’ll come right back

HB saison. Look at that head retention 😂. 25% wheat will do that. This is the clean be-134 version and wow is it good.

I like wlp002 a lot for wc ipas. You will want to mash fairly low (65c) to get 80%+ attenuation, but if you do it's a great choice. I will also use bry97, of the various chico-related yeasts that is my favorite for hoppy beers.

I think you'll enjoy the simplicity of BIAB.:) You'll probably find that the snowbank acts as a great insulator instead of chilling - you'll quickly melt snow around the kettle and then it's basically an igloo for your kettle 🤣
