    I've used S-04 in a pinch and it works great, I really can't complain. IMO, it doesn't produce as bright of a hop flavor as some of the yeasts I've used from Imperial but we're talking slight differences. When served to family and friends, they didn't notice a difference.

    Also, you did mash at 149, you definitely pulled out more fermentable sugars. If you mashed higher at 154-156, you would have a higher finishing gravity. I would mash at 148 or 149 to have the beer finish out dryer in the single digit gravity points. Mash higher next time and I think you'll...

    I'm sure you've already thought of this but you could do a Cascade SMaSH. One of my favorite IPA's so far has been Resilience IPA (Grain bill is just 2-row and C60) which uses just cascade and centennial. Hell, make an all cascade NEIPA, 6oz in the mash, 6oz in the dry hop. Cascade blonde...

    Have you measured your bucket fermenter? I ferment my NEIPA's in a 6.5 gallon glass car boy till I get the All Rounder so I can do pressure transfers. There's barely any headspace and I have to use a blowoff tube but it works for me.

    My non NEIPA beers I shoot for a post boil kettle volume of 6 gallons to account for loss, trub, etc and I generally end up with a full 5 gallons into the keg. For NEIPA's I'm shooting for 6.5 Gallons so that It gives me 1.5 gallons of loss to hop matter...and still get 5 gallons into the keg...

    The next batch I do, I'm going to reserve some whirlpool hops for a shorter whirlpool contact time....sub 10 minutes before being chilled and sent to the fermentor. I wonder what flavor compounds could be captured from that.

    So, when I was involved with the yeast experiment for brewtubers...Mine ended at 1.023.....everyone who reviewed it thought it was dry and crisp, however didn't pick up on the higher final gravity till they read the details on the bottle. I don't know if many people palates can pick up a 10...

    I recently used oats in a golden ale and I don't know if I really pick up on any additional mouthfeel. I may or maynot use oats in my next NEIPA. I'm also intrigued by doing less WP hops and more of it in the dry hop.

    Sounds like Beer line ID and length are your issue. I've had to shorten mine to around 7 feet or so however I have a short rise to my taps from my kegs. In my kegerator that I have upstairs with a tap tower, I need 10 feet of line to get it to pour correctly.

    I was just re-reading comments and wanted to say that a couple years ago, I accidentally put special B into an Oktoberfest, to the tune of 3.7% of the girst, and it was delicious. I'll never make another Oktoberfest without it.

    I think it's a great beer however if you're looking to brew a NEIPA...something more like Treehouse or Trillium, then there are other recipes on this site that'll give you that full hop saturated flavor if that's what you're after.
