    Blueberry Pomegranate Hibiscus

I'm actually planning on doing a 5 gallon batch with a SG of 1.080, so it should be around 10% I'm hoping it doesn't mess with the balance too much. I'll let you know.

    Blueberry Pomegranate Hibiscus

Honestly it started as a curiosity, reading into ancient meads. Meadowsweet is also known as mead-wort from its widespread use in mead. I messed around trying different tea mixes and it paired well with hibiscus, tasted great with a little honey. The flavors blended really well for me, the tea...

    Buckwheat Mead

So at seven days both batches are at 1.000 and the D47 has pretty much dropped out. Fermenting room temperature for the week has been around 60°, it's getting colder here. Looks and tastes pretty good right now...

    Buckwheat Mead

So I'm finally going to try and make a straight buckwheat honey mead. I absolutely love it for eating/baking, but haven't heard much good about meads. I'm trying 2 batches one with lalvin D47 and one with ec-1118. Both batches made the same as my clover mead that came out awesome. Just some...

A little help with a recipe

Ok so reading some recipes it seems to be between 2-3 lbs grain for a gallon batch of wheat beer, so would it be fair to assume that I could pretty much split that 50/50 with honey? Also are nutrient additions required as with a traditional mead? Recipe in works... 1-1.5lb mn red wheat malt 1lb...

A little help with a recipe

Thanks! I will have to look into DME/LME a little more. As far as honey I have clover and buckwheat honey on hand, was planning a mix that's heavier on clover. I'm aiming for a SG of about 1.100-1.110 with a 10% ale yeast should leave just enough residual sweetness to balance the hops, just...

A little help with a recipe

I was watching this BBC documentary about vikings and he tried a traditional mead that sounded pretty good, but only listed a few ingredients. And sounds more like a braggot, which I haven't tried as of yet. Basic ingredients named were honey, malted wheat, bog myrtle for bitter and cranberries...

Ok so my buddy let me use some 1gal equipment and I started 3 test batches. I did the previous recipe (used a tsp/cup meadowsweet and hibiscus tea, did a half gallon, and 1lb buckwheat 2lbs clover honey, a quart of pomegranate juice and 2lbs blueberries) and added a chocolate coffee (used...

    Recipe Development

Well my meadowsweet is set to arrive on Monday(as I couldn't get it locally) and I'm going to find the mixture that tastes best to me(thus the no amounts yet) and expand for 3 gallons of tea. I usually use 2 packets of yeast in 12.5g goferm. I haven't done the exact maths on the fermaid o yet...

    Recipe Development

So I've been brewing for a couple of years now (with lots of help from forums, thanks by the way) and I've been wanting to start experimenting with different flavor combinations (I'm a cook so it comes naturally lol). I've been working on a recipe for a little while and any input/recommendations...
