    Looks good - I would remove the late hop addition and toss in all hops at the beginning of the boil. Perhaps add 1/2 pound of rice hulls to prevent clogging during the sparge.

    EDIT: Single Bottle Carbonation - Not Fermentation..... I brewed a beer in early January with Wyeast 3711 (French Saison), belgian sour mix (WLP655), and dregs from about 10 different beers. I'm only two months into aging, but it is already down to .998 and I want to bottle 2-3 bottles...

    +1 Don't let it sit in the keg that long. You'd be better off leaving it in the fermenter until you get a CO2 tank rather than putting it in the keg without CO2.
