    I brewed this 11/29, dry hopped 12/5. I can either bottle this saturday (12/11) or when I get back from vaca 12/18. I'd like to get it done this saturday, but if I can't squeeze it it, will it affect my beer?

    Thanks, seems to still be chugging along :mug: Depending on how things play out this weekend, I will probably dry hop on Monday.

    Quick update and follow on question. After 4 days fermenting (and still going according to my hydro), I'm down to 1.018. All my previous batches (all 8 or so) have been done fermenting is 48 hours or so, and all started faster as well. Is the lag or the length a good thing, a bad thing, or...

    OK, so kinda funny, but shows my level of (im)patience. They hydrometer reading I took this am has started to ferment right in front of my eyes. A little krausen ring, and OG has dropped to 1.062. I'll get back to work now and stop bothering you guys :D :mug:

    Drank a bottle of my first attempt last night. Very tasty, but needs more time (only 1.5 weeks in the bottle). Question, the beer was clearer when I bottled it that it was drinking it last time. Will more time help?

    My batch is chugging along in the fermentor. Down to 1.012 from 1.078 after 3 days (I'm still figuring things out, I was clearly a little short in the water department, while my efficiency went up a bit from my last brew). Looks and smells great, I guess it's just gonna be close to 9% abv ;)

    Thanks, I have a mini-fridge with an STC1000, tape the probe to the side of fermenter with some bubble pack to insulate. worked really well on my last batch. I guess I'll lower the fermentation temp a little. Did you increase it after active fermentation was complete? And thanks for the...
