    I've heard of people using a rolling pin to crack the grains but I know I wouldn't do it. Just buy the grains milled next time.

    Definitely carmelize the wort. Its easy to do and makes a big difference. Great choice on the yeast though, I've found I like 1728 in all sorts of things.

    You could email Darin and ask him but, knowing him, I'm sure a lot of thought and testing went in to the decision. Just trust thats probably where it worked best. With the basket, it cant be very high up the kettle either so the choices were sort of limited anyway.
