Abra, I do the same thing often when using whole hops. I've read that as long as the hops are not over-crowded in the bag, utilization rates only vary a little bit. If you really pack 'em in there you will get different utilization.

I most often end up using pellets for bittering and whole for everything else. Overall, pellets are a PITA because of the resultant sludge they turn into but they are more consistent, IMO, for bittering than whole due to the whole 'how old are they', 'how were they stored' issues that concern...

You'd have to soak the bottles in something (I use B-Brite) for a while (good to do anyway!) then scrape the labels and residue off with a plastic pan-scraper. It is a bit work-intensive compared to other methods but it will work fine if you just want to use 'em.
