    Yeast is amazing. Kegged my session saison about a week ago. Pitched at *68 degrees in a fermchamber and let it rise over the course of 5 days to *78. Perfect saison flavor and I will be using it again. May try a tripel and keep the yeast under 70.

    I kegged my English Mild I brewed with the Mangrove Newcastle Dark Ale Yeast. It turned out well with a nice malty fruity flavor. I would happily use it again.

    I think saison is pretty easy but we all have our beer. I can brew a great saison but have failed on a few belgian dark strong ales.

    I agree... everyone "can make one" but to do a great one is tough. I think its because of the temperature, gravity, and pitch rate of the yeast.

    Blonde Ale sounds like a better time line. I just use a 5 gallon paint strainer bag tied off with non flavored dental floss to dry hop in kegs. Good luck! Oh and if you are doing a 4% Blonde Ale I wouldnt worry about 2 packs of yeast unless they are close to expiring!

    Why would this extract tannins? You wouldn't be sparging the grain and the temperature would be the same throughout the steep. Ph?
