    If given enough time not dissolving the sugar shouldn't have mattered. I've added straight honey to a carboy during primary and the finished beer was nice a dry (saison) What was your OG / FG? What yeast strain?

    The banana flavor is a result of the high fermentation temps = unwanted yeast esters. You will need to figure out a way to keep it more in the 60's to get a nice clean beer. I don't think the banana taste will fade.

    Bio-Fine works great for me and is easier to use than gelatin. There's no dissolving/blooming in hot water and it's a vegan product.

    It is a great strain. I've been using it in all my west coast IPA's with superb results. It has a super clean taste, it's fast working, and attenuates just right. I just had a batch take a gold at a BJCP comp and a silver in the first round of the NHC

    Agreed, cut it down to a max of 2 ounces. I usually throw it in at mash out as I've read it cuts down on the flavor impact as opposed to adding to the entire grist at dough in.     Got some work done on it this weekend. Installed tubular steel for the burners to sit on. Ripped the steel off from my dads old dump truck. Added 2x4's for the bottom shelf. Mounted the switch for the pump and trimmed out the top.
