    Just a note, if your beer isn't completely done carbing, the CO2 could be going into solution. (assuming the keg isn't empty) I don't think your experiment necessarily means you have a leak.

    The line length is a lot less important, because the majority of the resistance is in the restrictor plate. It is overcarbed though for beergas from what I read. 30 psi with 75/25 should be carbed at about 7.5 psi, so being served at 11 before is probably a big part of the problem. edit...

    I have boiled starters on my side burner, and I boil corn and brats on it. Nothing close to 5 gallons, but I think you could boil 2.5-3 easily if you were doing partial boils.

    I don't know what the right diameter would be for this setup, but the restrictor plate on my stout faucet has 5 holes that are less than 1mm. They are like little pin holes.

    good prices on shanks

    I got mine from rapidswholesale.com. They have stainless in 3" and 4" I haven't done much price hunting on them lately, but at the time I bought them, it was the best price I could find on stainless.

    So when using a stir plate I can make starters with higher gravity? What ratio do people typically use? I built one recently and besides stirring, I haven't changed anything about my starters.

    Quarter barrel "slim" Sankes... Are they rare?

    I have never fermented in a sanke, and have not seen them on hand in our liquor store, but I ordered a 1/4 of Killians recently and it came in a slim quarter, so they are still being used.
