    I also use a hop bag (paint strainer) and havn't had any clogging issues. I stopped using Irish Moss some time back as Ive found my beers clear completely with gelatine but I suspect Irish Moss may cause some cloggin issues. There have been threads on HBT of plate chillers becoming unusable...

    Can someone suggest a good, inexpensive pH meter?

    I suggest get a water proof pH meter - the nature of brewing kills non-waterpoof versions.

    I recently aquired a plate chiller from Dudadiesel. The four connectors are not labelled at all, am I correct to assume that flow can be in any direction and any pair can be used for either water or wort ?

    what makes a good stout

    Very similair to mine except I drop the chocolate and add 500g wheat malt. Colour should be about 26 SRM with a bitterness ratio of about 0.7 using one hop addition at 60 mins (no aroma hops). I like fuggles in mine. I tried one recently with fresh ginger added during the boil - it was excellent.

    I don't know. Im not sure whether the small amount of nitrogen is enough to freeze the beer but even if it does it gets heated from pasteurisation.

    Someone correct me if Im wrong but afaik all Guiness is brewed in Dublin and therefor should taste the same where ever its drank - depending on how old it is of course. I agree its not a great stout but beats BMC type lagers. BTW the behemoth that is SABMiller has been making noises recently...

    Mashing with Quick Oats

    I also just toss them in after milling them. Bear in mind though, there is a subtle difference between quick oats and instant oats depending on the marketing angle : Quick oats are milled finer so they cook quicker, instant oats are pre cooked.

    Using 9097 - when to rack ?

    I made a barley wine with Wyeast 9097 (Brett. blend). My normal procedure with big beers is to rack to 2ndary after a month - should I do the same with this beer considering the Brett. or should I leave it in primary for longer ? I havn't noticed a pellicle yet.
