Looking for recommendations - London, UK

If you're here during the week then you'll be able to avoid the naff tourist traps and visit some of out-of-the-way pubs that we frequent after work. Lots are closed at the weekend due to being off the tourist trail. My favourite area for pubs is Chancery Lane/Holborn though the old streets...

American Wheat Beer Topical Haze: a sessionable American wheat

This one came about because I had a lot of wheat that needed using up. I decided to combine that with some Citra and Amarillo to create a sessionable American wheat ale and the results have far exceeded my modest expectations. This would make a great summer evening brew to accompany some...

    WLP007 Over attenuation

Looking back at my last 3 brews with WLP007 I've had 80.7%, 81.9%, 80.5% attenuation so no, it's not unusual at all to hit 80%. It's a beast of a yeast that'll rip through your wort, drop like a ton of bricks and leave you with a clean, dry and bright brew that lets hops shine through. I...

    Freezing yeast: best glycerine/water/yeast ratio?

I've read all tutorials here and on the wider internet and am still a bit unsure of the best ratios to use for glycerine, water and yeast slurry. I have the kit: 20ml autoclavable glass jars with screw tops, dropper pipette, pressure cooker. I have yeast that I want to freeze from an overbuilt...

    Short term starter storage question

You were all right. I did the step up to the second stage a couple of days ago. The yeast was healthy looking and got itself a nice krausen overnight - about 10 hours.

WYeast 1203-PC Burton IPA Blend available

I think I'm going to try this in my best bitter recipe that I'll brew in a couple of months. If it's any good I'll keep some on the go in the fridge for when Wyeast stop selling it in March.

WYeast 1203-PC Burton IPA Blend available

Looks like wyeast have released this one from the private collection. Has anyone got any experience with it and if you have used it would you do so again?

    I'm bitter. Too bitter.

I do find that the bitterness, or at least my perception of it, does change over time. It maybe that harsh bitterness mellows to smooth but there's certainly a change that I perceive between, say 2 and 6 weeks in the bottle.

    Short term starter storage question

I thought it'd be OK at this time of year but wanted to double-check the plan. I'll move the bucket it's in onto the cold stone floor so it keeps as cool as possible.

    Short term starter storage question

My next brew requires a 2-step starter with lager yeast. I have completed step 1 and now life has got in the way and there will be an 8 day gap before I can do step 2. I'm currently storing the starter in its flask with the foil on top, with the flask in a sterilised brewing bucket with the lid...

Target Water Profile for Munich Helles

Bumping this post to hopefully find out what you ran with and how it turned out because I'm setting up a water profile for my first Helles at the moment.

    Soapy Tasting Beer

What do you wash your equipment with and does the bad flavor go away or get worse over time?

    When to Test Mash pH?

I know I'm bumping an old thread here but I was wondering what difference, if any, it makes to take the mash pH right at the end of the mash? The reason is I don't want to be lifting the lid trying to take measurements and make adjustments all the while losing vital heat from the mash. I'd be...

Alternative to Siphoning (I hate it.. Help!)

Fermenter to bottles via spigot, hose and bottling wand. Bottling day is a breeze for me. The spigot is removed afterwards, cleaned, dried and stored off the fermenter.

Englisch Pale Ale - Tips and Advice

I've used Celeia in a low SRM ale about a year ago as a late and dry hop. I don't remember getting any of the Fuggle earthiness but I do recall a big burst of juicy herbal flavours that I really enjoyed.

Englisch Pale Ale - Tips and Advice

Yes it's Sheps owned and they get everything the brewery offers from the seasonal Early Bird and Late Red to the IPA, Christmas Ale (love that one) and Halloween specials. They also get a lot of experimental casks from the No.18 Yard pilot brewery. All on tap. It's the regulars that have...

Englisch Pale Ale - Tips and Advice

I do hope you get around to this. I've seen many a guess as to the malt bill in Spitfire but most look too complex to be what a commercial brewer would use in a mass market product.

Englisch Pale Ale - Tips and Advice

And you would be correct, it is very different in cask. Rich, complex, finely balanced and very much the younger brother of Bishops Finger. If all you've had is the bottled version then you're missing out. Our local is a very good Shepherd Neame with everything kept exactly as it should be...

Englisch Pale Ale - Tips and Advice

Ah, 1 gallon. That'll teach me not to pay full attention. I was thinking the full 5 gallons. You're spot on with your numbers. I'd drink it!!!
