    When it's done. Yeast has it's own schedule. Hydrometer is the only way to know for sure. Although it's best to leave it on the yeast for a while after wards to let the yeast clean up after themselves. Then skip secondary cold crash and siphon from the top down into keg or bottling buckets...

    Cleaning out the mash tun. Especially if I'm brewing late at night and forget about it for a day. I have to remind myself that even though i made it for cheap i shouldn't just throw it away and make a new one.

    Rogue beer are one of my favorite. Try their hazelnut brown ale. Dragonmeads Tripel is really good as well. Those are the only two that i recognized from the list. Wish i was there. I love Montreal.
