    Less than 24 hrs for Yeast starter ok?

    I was planning on making my yeast starter from a white labs liquid yeast tonight (Friday) as I planned on brewing on Sunday. Now it looks like I have to brew Saturday (rain on Sunday). That will give my starter less than 24 hours. Is that going to be enough time to make the start usefull?

    The information that I got from BYO.com was that you want calcium to be high (100-250 ppm) and carbonites low 50ppm or less.

    I couldnt find the PH in any reports. Maybe you can help me out with that? Ive heard that Calcium should be between 100-250 ppm, and carbonites 50ppm or lower.

    I have an extract recipe that calls for 1lb of pale malt (2 Row). I dont mash, so I guess I will be steeping this grain for about 30 minutes at 170 degrees. This is an ESB recipe, very close to the BYO Redhook clone. What will I really be getting out of this step? Will it just be color...

    How many hot breaks can there be?

    I guess I should have said, whats the best way to prevent a boil over from the hot break? I have to pick my pot off the flame a couple times to get to the rolling boil after the hot break to avoid a boil over. Is there something that im missing? maybe higher heat?

    Record Keeping Questions.

    I started using BeerSmith and one thing I noticed, that I never really realized before was that when I changed the boil volume from say 2 to 3 gallons, the bitterness change significantly. I could have done the same recipe with that one difference and not figured that out on my own.

    Buying Secondary - what shoud I get?

    Sounds like Better-Bottle might be the right solution for me. Would you suggest getting the spigot? It seems like those spigots never get that last bit of beer out of the bottom since it is slightly higher than the bottom of the bucket.

    The reason is ask is becuase i have a heater to keep the temp around 68. So i guess it wont matter if i turn it off now, as long as it doesnt drop below 60?
