    I used to hassle with the blowoff you need with this yeast but now I ferment in 8 gallon wine buckets with an unsealed lid. Makes it easy to top crop that healthy krausen yeast and maybe it simulates open fermentation at westvleteren but it probably makes no difference.

    I've noticed cat pee aroma from the citra I bought in bulk at the beginning of the year. Nothing like the over ripe mango I used to get from previous crops of citra. My thinking is that the brewerys are selecting all the nice tropical citra crops and leaving us homebrewers with the catty crops...

    is it safe?

    It's intended to be used while still wet. If you wait for it to dry additional microscopic bacterias, yeast, microbes etc in the air could actually land back on the surface and it would no longer be sterile. A small puddle should be fine as long as it's not a significant amount.

    I used the east coast yeast Conan strain and that thing was a BEAST. It tore through 1.073 sg wort in 48 hours down to 1.011. The peach/apricot esters of this beer taste beautiful.

    Oh wow my first attempt at the csi recipe with decoction I boiled the decoction 20+ minutes. I really could have saved myself some time with that 2-3 minute boil. I hope it doesn't have a negative impact on the flavor.
