    hydrate s-04?

    I used S-04 in my last batch, and like the package said just pitched it in without re-hydrating. My attenuation was not as much as I was hoping for. So, I can't say for certain whether this was the reason why, but from now on I am planning to always re-hydrate dry yeasts.

    Will gelatin cause yeast to stop fermenting?

    I've used gelatin in the last two batches I have bottled, and there's no issue with carbonation. There's still plenty of yeast left even after using gelatin. It definitely does help the beer clear up quite nicely.

    I checked my SG last night, and it's down to 1.010. That isn't too much different than your first batch. Maybe it's the different yeast that accounts for the different attenuation?
