    APA w/ Amarillo (thoughts please!)

    I just made one with a similar grain bill to yours and a similar hop schedule to what Yooper said (I had the amarillo mixed with cascade & centennial in the late additions) & it turned out fantastic. The amarillo is fantastic. Super bright & citrusy. It's a winner.

    I'd start with taking it apart and making sure it's put back together correctly. If those mechanisms aren't lined up correctly it probably would foam like that.

    If you have some stainless steel nuts lying around somewhere you could sanitize them & throw them in the hop bags. I've done that before in a pinch.

    Great idea. All grain is a blast and I wish I would've started earlier. Just make sure you do the research & understand the basics and good sanitation practices. An all grain kit might be a great way to go with detailed instructions.

    Midwest's kits are fantastic. The one thing I found, too, was doing a full boil if you have a big enough kettle. On recipes like this Surly clone it'll really help add that hoppy kick you're looking for.

    Also with this one I used a big 2 liter yeast starter and fermented at the low end of the strain (about 60-62F). The yeast really got out of the way to let the malt and hops shine through.
