    Kind of strange you had such low attenuation, maybe keep an eye on your mash temps next time :confused: BUT my last batch I used 1450 and it finished at 1.022 and I think it was my best version yet...this beer does well with some body.

    I wonder if it is the corn sugar at bottling. I know when I bottled and I used corn sugar, it always gave me an off flavor that I couldn't place but could be perceived as "thin".

    I think with the kettle size you are limited to smaller batches. You could produce moderate gravity beers, like normal, with a 5 gallon cooler and an 8-10 gallon kettle. The other option is to add DME or LME to get your 2.5 to 3 gallons of wort up to a high gravity and then top up to 5 gallons...

    To add to the great advice already in this thread...don't be freaked out, and subsequently make yet another "no airlock activity..." post....If you've pitched your yeast at 70 degrees or less, it WILL work...I have used yeast that was 2 years out of date and it fermented my beer. Brew on!

    From what I understand, the main function of boil-off is kettle diameter...whether you do a simmer or a balls-out boil..you will still boil off essentially the same.

    You cannot measure FG-accurately-with a refractometer, you need a hydrometer. However, there are calculators out there that adjust refrac. readings to account for the presence of alcohol...however IMO the only way to kow for sure is a hydrometer.
