    Thanks for the help. I was going to build it, but I have already converted 1 chest freezer for my taps, and it was very easy. I suppose finding a larger chest freezer for the ferm chamber woud be better than building one. Cheers!

    What about simply re-circulating at the end of the boil, through a large mesh bag? this would help strain a lot of the mess out of the wort, before running it through the plate chiller. Has anyone done this? I just bought a plate chiller and would like to avoid getting crap stuck inside it.

    Using the yeast cake

    Russian Imperials are also high in alcohol. This may mutate the yeast making it a poor choice to re-use the cake. upper limits on ABV for re-using yeast are generally about 6%. I am no pro, just passing along info I have learned from others.

    My first batch which will be fermenting in the two different 6.5 gallon carboys will have an O.G. of 1.072 - 1.075. This should not be high enough to mutate the yeast. if my next batches are 1.082 - 1.085 for the IIPA and 1.112 - 1.114 for the Barleywine, I shouldn't worry about overpitching...
