If you're pitching yeast directly from a smack pack without making a starter, you have more to worry about than the temperature.

I think the opposite is true. I don't think Citra makes beer TASTE like cat piss. It makes the beer SMELL like cat piss. But, it will taste wonderful. So, if you want to avoid the big cat piss smell, go easy on the dry hopping. That being said, I love Citra IPAs! Love the smell, too...

I am drinking some Kölsch!

In 2002 I went on a trip to Germany with a small group homebrewers and we spent 2 nights in Cologne. We must have had a dozen different varieties of authentic Kölsch! There are not too many American versions of Kölsch that taste as good as those.

I recommend you hook up an immersion chiller to run your tap water through first before it hits your plate chiller. Just put the immersion chiller in a bucket of ice water with some rock salt and you will have frosty cold water chilling your plate chiller...

I also brewed on Wednesday the 4th. The temp in my garage where I brewed was about 95°! Had two fans blasting me and was chugging Gatorade the entire time! LOL!

Only 20 gallons in your pipeline? I hope you have lots of help with your drinking! LOL! :mug:

You might want to try adding oil while drilling, if it gets too hot. Or even better, if you can find the right size Spade Bit, that might work best.

Did you brew this much for any special occasion or just because this was the only time you had available to brew?
