Help me with Hops replacement for Dogfish Head 60 minute

Can you get Chinook and Centennial? The combo of these works OK for a substitute for Amarillo/Simcoe - better than Cascade or Magnum. That said, Cascade is a pretty good dry hop to use for the citrus nose.

    Dry pale ale

To get a dry finish you need to dominate fermentation, get that TG down to 1.010 or so if you can. Bright neutral yeasts can work for this: WLP001, WLP090, even dry Nottingham ale perhaps. If you're all-grain, mash at lower temps (150). Keep a simple malt bill, minimal Caramel or Munich malts...

    Not enough O2?

Insufficient oxygen is but one cause of an incomplete fermentation - so maybe. Others: -Not enough yeast cells. Assuming you did 5 gallons, mrmalty shows you need 1.7B yeast cells, more than you get out of a normal smack pack - sounds like you didn't do a starter. That said, I've certainly had...

    Midnight CDA

Agreed. I want to close my eyes and smell just about the same aroma as an IPA, but then be surprised when I taste the malt/roast complexity in the flavor. Don't want to end up with a porter with a weird hop profile, the hops need to stand out.

Transferred and tasted last night, TG= 1.016, right on target for a 7%, although my recipe changed a lot from what I had up above: Boil Time:60 min Batch Size: 10 gallons Boil Size: 12.7 gallons Efficiency: 75% Projected; OG: 1.071 IBU: 64 SRM: 37 18 lbs 2-row 3.2 lbs Munich 20L 3.2...

    Help save this wheat

Dry hopping really isn't going to do much for your flavor, but will help you at least get some aroma character - drop another oz or two of Cascade in there.

I ended up brewing this last night with a couple changes - my recipe is here: http://www.brewersfriend.com/homebrew/recipe/view/16476/midnight-cda hit my 1.070 OG target right on and fermentation was quite angry this morning with a WLP001 starter. I'll update when I have some tasting notes.

    Another Portland, OR Brewer

+1 on brew brothers. Aside from not having Simcoe/Amarillo (only Steinbarts), they have a great and affordable selection - you'll save 30-50% on hops, check out their drop-off points. Pay $5 and pick it up near you, malt crushed and packaged - it's pretty sweet.

    Another Portland, OR Brewer

Hey all, I'm on this forum a lot, but haven't been much of a contributer yet and I'm trying to change that. I'm an intermediate homebrewer at this point, I brew 10 gallon all-grain batches and keep a brew blog (who doesn't?). I dream of opening a brewery in the next couple years (hiring a...

    Midnight CDA

Good call, I'll up the midnight wheat - I've had a few CDAs with a burnt flavor that I did not appreciate.
