    Words of wisdom. If your beer IS damn tasty & maybe a lil unique, try bringing some to your interview. (at a later time, maybe?) OR just constantly kick-down your killer beer to your choice breweries employee/brewers until they get sick of you & 86' your ass OR give you a job IN the brew house...

    Aeration

    Gotta have a big-ass, f!#?%'n mustache, (moustachio?) for that one, dude. Moustachio? Who even says that, anyway!?

    How do you draw your hydrometer samples?

    Just installed another spigot on another ferment bucket. I feel this will help w/ hydro samples & tastings along the way. No opening the bucket. No sanitizing anything. Draw a lil out the tap, take a reading, drink, be happy. Or lost & confused :}

    House Yeasts

    I like the idea of it. I WAS using wlp001+wlp007 (cal ale + dry eng. ale) as a potential house yeast for all my brews, but I didnt like the results of 2 similar consecutive brew, so I'm still fishing... I'm sure I must've contaminated something perhaps along the way as those two together...

    Southampton Publick House Burton IPA. Very awesome, indeed. The bastards nailed the exact beer I've been trying to nail. Kudos! Ahhh...more inspiration!

    How do you get a smooth, creamy, satin-like finish in your beer?

    I always throw in 1 lb quick oats to a 10-13lb grainbill. Or I do .5# oats + .5# wheat. I use malted wheat (white). The wheat mainly effects head retention, there maybe a just a touch of flavor from these, but nothing that really stands out. I always get great head :)

    Copy that. I trust that dude. It's more of a muscle-memory kinda thing, i guess. I just caught myself doing it, and thought, " why am I doing this? I'm not making a stock. Stop thinking about work!!" cheers.

    My Cherry Smoked Cherry Ale. Slightly twisted version of Brooklyn Brew Shop's recipe. And it's amazing! Just right. Cheers, y'all.
