    I think this is how Hopslam came to be (sans high mash temp issue).. slow fermentation and a deadline. The brewer added honey to kick the yeast and maybe some extra hops to offset the residual sweetness. The rest is marketing history. I was drinking when I heard that story FWIW

    I've thought about making syrup for different soda's, even root beer. Some of the methods add alcohol but you can force carb and even pasteurize if you have the desire. It sounds fun to me but I am not sure how much a kid would like to "design" their own soda (and commit through the process HA!)...

    Edited for additional info I bought a fermenting kit for cleaning and closed transfers.. It has worked very well. I plug the liquid side during fermentation, you could do the same for spunding. The only issue I had was a worn gasket did not want to seal very well, a new/spare gasket on hand...

    I love tinkering with this kind of stuff I also recommend a thermowell for your temp sensor inside the fermenter. The temp sensor on the outside is just asking for trouble with icewater flowing over it, IMHO. You could also do a submerged fermenter connected to another bucket of icewater...

    Coors banquet

    This has turned out to be a good thread! Interesting yeast discussion; Cry Havoc / Fist Bump is a good story unleashed from the vaults at Coors and possibly being a harvest from some Budweiser. I have always been impressed with Coors since learning more about their history and dedication.

    I would also trust the pasteurization (in addition to pulp or concentrate) FWIW I used the candied orange peel method a couple years ago (see clawhammer supply) and it gave me great flavor. I am thinking about making another batch soon. I would think Grapefruit or other peels would be the same...

    RIP to an iconic brewery that lasted over a century! Revival led by Fritz Maytag in the 80's before selling to the investment group. Fritz sounds like a smart business man, earning himself 12 James Beard awards (one lifetime achievement award and a host of beer/wine/spirits professional awards)...
