IPA - WCS with Amarillo/Simcoe/Citra hop additions

Doing a fairly basic west coast style IPA, 1.070 OG, with 10 oz of hops. Looking for clean bitterness from mid additions & a good nose. I think I have an idea, however, looking for suggestions on how YOU'D hop/dryhop it :D .5 Chinook 4 oz Amarillo 4 oz Simcoe 2 oz Citra Thanks!

    S-04, carbonation & bananas

Nice man! Do it Im bottling on monday, so I'll know then. However, i think it's going to be stellar. Got really good citra from farmhouse & ended up using S-04 after all. I used the wet t-shirt method w/ice in a cooler to keep temps at 64 during the peak. Had a really nice, clean and fast...

    5 Day Sweet Country Cider

Just finished bottling this today. Brewed Tues night, bottled Fri morning (3 full days). No gravity readings. Went thru a full krausen, then dropped. Eventually turned into a sticky looming krausen, which I just racked under. My bottles carbed up immediately, like 1.5 hours. Used plastic...

    5 Day Sweet Country Cider

I have this coming up tomorrow and looking for suggestions on ferm temps. Not listed on page 1 & haven't really seen it discussed. Is it the typical "dont run Notty over 68 or bad things will happen". What's everyone using? Thanks & look forward to this :D

American Pale Ale Three Floyds Zombie Dust Clone

Wow, 30 min? That blows...poor rationing from the bartenders in my opinion. So, a few things. The smell coming out the airlock is the fruity tropical bombastic I expected from this. Oh citra :p Also, anyone else have S-04 finish in 2 days?!? I know its not done, but it went gangbusters for a...

    Saison Cottage House Saison

Bottled this today after 20 days in primary (1st week low 60's, last 2 at room temp). Sample tasted great! Good funk in there from the 3711, which was surprising. Harvested some Brett dregs recently to throw in the next batch with 3711, but dont think I'll need much.

Why does my beer taste like cat pee?

Hope beers better by now. But um, why wait 4.5 weeks to bottle a PA. Maybe has something to do with it sitting on that much hops?

Should I add Citra to this IPA?

In that case, I would keep it separate this time around. Go all amarillo/sim & save citra for a later brew. If you're destined to get it in there, then I'd go amarillo/sim 15/10, hopstand with citra & something citrusy like cascade, then dry-hop with amarillo/sim again, nothing big. Otherwise I...

Should I add Citra to this IPA?

Sure. Combine 20 & 1 additions to 15min, move dry-hop additions to zero/hopstand and then dry-hop with 3oz Citra. Amarillo/simcoe pretty good on its own thou, like you mentioned. Thou I like to error on the side of more hops

    S-04, carbonation & bananas

Man, you're right. I didnt even think about that. Notty was first in line since I heard same about windsor, but kinda puts me in same boat as S-04. I can keep temps below 68 ambient no problem, but the initial start stage puts me close to 70 before it settles low 60's. I have a feeling this is...

    S-04, carbonation & bananas

Looking to get Zombie dust clone in the rotation & concerned about this off putting S-04 response, especially since I have no real means of temp control. My inclination is to just go wlp002/wyeast + starter, but with a pale ale'ish with a relatively low OG, would a windsor or notty make a...

Partial mash vs extract kit questions

I think that's the general consensus, extract-->pm-->all grain. The last few I did were PM, and what I really think it provides is greater flexibility. Some base grains dont make it into a malt base or 'need' to be mashed, therefore you're able to do that.

    An Almost Imperial IPA

You pitched this without a starter?! Shy of 1.07 seems like a double, and a packet of us-05 came up short for me. Honestly I'd think you'd be higher with all the fermentables And do the corn sugar & maltodextrin additions cancel each other out? Thanks

    Saison Cottage House Saison

Just got this into the fermenter. My notes: Partial mash went well, 60min biab stove top method with 10 min sparge in bucket. 2lb belgian pils, 1lb wheat, .5lb caramunich, .5lb instant oats. 0.75tsp Gypsum added Used 0.5 oz HBC 324 in lieu of Sorachi Ace @ FWH. Fuggles per spec Flameout...

    Saison Cottage House Saison

Thanks. Yes, between those 3, that's what I currently have on hand for the FWH. I ordered the Fuggles for the aroma additions, along with everything else verbatim. I have a little smaller batch size, so see how it turns out. Thought Chinook would be too dank & FF not sure, too IPA'ish?
