    2nd brew, no hot break...

yes, I found out too late about the temp for Kolsh. Hopefully I don't like it too much (won't be tempted to make it again :D ). I am using a soaking towel and freezer packs to keep the temp down. temp is about 60 - 64 so far. The weather is cooperating, so it will stay around that temp for the...

    Hydrometer reading

I don't strain, but I dump my wort into my botling bucket and let it sit for 2-3 hours before transferring to my fermenting vessel. Much of the larger particulate matter will settle down to below the spigot an will hence stay out of my fermenter. Just a thought.

    2nd brew, no hot break...

I have a spigot on the bottom of my fermenting bucket. Is it still a good idea to put the whole shebang in a tub?

    Bottles with screw caps

Need to use the 40oz bottles with the real screw caps (like the malt liquor ones hehe)!!! Not so many bottles to fill, plus you can always say "I just had one!"

    2nd brew, no hot break...

ok, I got a killer cold break. I let it sit for 3 hours in a settling tank before transferring to my fermenter. OG is right on at 1.046. I am using Wyeast Kolsh yeast, and I have to say it smells nowhere near as good as the Wyeast American Ale yeast I used for my first batch. The American Ale...

    2nd brew, no hot break...

Am boiling my second Wort (Koelsch this time). What's odd is there aren't big snot-looking particles precipitating out like on the first one. what could I be doing wrong? I even used a lil Irish Moss...

Ok, I am half in the bag form my first ever batch. yay!!! The beer tastes so marvelous that I have totally lost repect for all the microbrewers in my area charging 4 bucks a pint for their boatmans swill.... My beer has such a good aroma (little tiny bit on the sweet side) and a tastes like...

    What gives reds/browns their flavor?

I am talking about the Sam Adams lager like beers, that have that distinctive brown beer flavor. I want to know becasue I am not a fan of the flavor, and want to avoid it (I like Hefeweizens, Kolsh, Pilsener, even some Pale ales (not too hoppy). Is it a certain grain that is steeped to...

Just drank my gravityy measuring sample...

OMFG it tastes awesome! I am so excited about this I had to start a separate thread (noone looks at my otherone anymore anyways). It has been 5 full days since brew day. The airlock has stopped bubbling, and tall the krausen has settled back into the liquid. There's about a 1/4 inch layer of...

first ever brew play by play...

fermantation seems to have completed after 5 full days. Krausen has collapsed back into the wort. I drew a beaker to measure the specific gravity, and it was 1.003 (down from 1.040 initially). it smelled really good, so I drank it. It was VERY tasty. it was sort of carbonated too, which really...

first ever brew play by play...

ok it is now day 4 of my ferment, and the bubbling of the airlock has all but stopped. The smells coming from the airlock are not really banana-ey anymore, and much more beer-like. temp has stayed right around 70-72 for the whole fermentation. I have high hopes for this first batch ever. I...

first ever brew play by play...

It's been a couple of days now, and the airlock is still bubbling happily. my fermentation closet smells pretty. Lately it smells like bananas when I sniff at the airlock. Yesterday it smelled better; More like beer and less like bananas, but I hear that the banana smell is pretty standard...

What are some good warm weather projects?

My primary is not a carboy, but a food grade bucket with a spigot near the bottom. Would it be ok to have the spigot submerged in ice water and then when fermentation is done pull the bucket up and out (potentially shaking up the trub)? How do I sanitize the spigot before transferring the...

What are some good warm weather projects?

not for drinking, but for brewing?? My fermentation closet gets kinda warm (mid 70's to 80). Fermenting elsewhere is not an option. I hear Wheat beers don't do so well in high temps (which stinks, because Hefweizen is one of the only beers I really like). Are there any that do well...
