    never had any problems yet. Even my most vigorous fermentation only put up about 3" of Krausen, i.e. never even reached higher than half of the available headspace in my fermenter bucket...

    yes, I use nothing but those (except for when I have a little more beer than grolsch bottles). I bought a case of brown ones at the HBS the other day, with porcelain tops. I am very pleased with them.

    the ESB sounds good to me. I am strugling to understand the ABV calculations though. SG = 1.030; FG 1.008 => ABV of 2.2, no??? you show 3% So the IIPA I just bottled had a SG of 1.075, and a FG of 1.012. I was calculating ABV to be SG-FG= 1.075 - 1.012 = 6.3% Is there more too it...

    5 days left in primary..

    wow, my hefe was finished fermenting by the 3rd day.... I used the Whitelabs Hefeweizen IV yeast. It turned out AWESOME (even though I am drinking it way too early).

    how to use Dishwasher for sanitizing?

    I put all the bottles in the bottom rack, spout down. I used the high temp rinse and b-bright instead of soap. Before that I had soaked the bottles in B-brite solution. I'll report any bad bottles if they occur.

    I heard someone tell me I can use my dishwasher to sanitize my bottles, and that most modern dishwwashers have a sanitizing cycle. I have a modern dishwasher, and I see potscrubbing cycle, and High temp wash and heated dry, but no sanitizing cycle... does anyone know? thx

    OG was actually 1.076 or so not 1.080 like I was thinking. oh well. still pretty high. the fermentation just started and is going great. I am starting to get some respect for Whitelabs yeast. the beer is pretty dark... I am not sure how people get away with calling it a "pale" ale :D
