Have you considered an elbow where the tubing kinks? I'm guessing it kinks where it attaches to the kettle.

I haven't noticed any bubbles. The only issue that I have is the weight of the valve and hoses tip the chiller over while in the pot.

I would worry about not being able to inspect the inside of the tube. If is not completely clean and dry inside, you will run the risk of verdigris forming the pipe. Verdigris will make you very sick.

I couldn't find where you posted the yeast, 75 seems a bit high. I would think 70 would be better.
