That pot is 13.5" diameter, so it will depend on the fitting you use to mount it, and how much of the element extends into the kettle.

I bet you could find a stainless canning rack that would sit on the bottom of the pot, so that the bottom of the bag is above the probe.

I used a TEMCo Run Capacitor RC0050-10 uf and wired it to a three-speed switch, which works great. The low speed is fine for general exhaust and the high speed cranks when the boil is underway.

Count me in!
