    I would just make the starter now. Without yeast in it, that wort is just asking for infection. If you make the starter now, you can chill it when it is done until your brew day, then decant the spent starter beer and pitch.

    Your plan is solid. Once it is carbonated it can sit untouched for years I'd you want. You should check it occasionally just to make sure it doesn't leak. Don't just purge and store. That CO2 will absorb and the keg might open up and expose the beer to air.

    Yes, I have done up to a 4.5 L starter in my 5L flask on my stirplate with no issues. I use a 1" stirbar and my stirplate is just like the simple one in the DIY forum. It does not spin as much as my 2L flask, but it keeps the yeast in suspension without a problem.

    I occasionally run both heat and cool at the same time, but usually unplug the freezer when it is cold enough in my garage to only need heat. Condensation is an issue, DampRid is your friend. Keep the lamp and cords high in your freezer and you shouldn't have any problems.
