Another factor to consider is big beers can take months, even up to 6, to properly carb. So, after 6 more months of bulk ageing, then up to another 6 before it's ready to drink. Maybe consider bottling now and let sit another 6 before starting to drink.

On a separate issue, mind if I ask you a question as an independent point of view? How much, by weight, do you fill a 10lb tank? I've weighed the tank before and after (at my local store here in Georgia) and get 7.5-8lbs. They claim the difference is for expansion. Thanks for your input.

This is what I use for passion fruit. It is a concentrate and comes in 16oz bottles. I find it in the international grocery stores for $3-$4 per bottle. I add it after fermentation is complete.
