How many yeast packages for high gravity beer?

I am brewing an imperial stout this weekend. The recipe tells me that the OG should be around 1.082. I bought 2 packages of Wyeast 1028 London Ale because the back states that more yeast is needed for beers with an OG over 1.060. My question is, should I just dump both packages in the wort in...

WLP 530, No signs of fermentation after 24 hours.

72 hours later this thing really took off. I am surprised since it started so slow. Trying to sneak its way through the airlock!

WLP 530, No signs of fermentation after 24 hours.

I snagged the last wlp530 from the brew shop on saturday, even if they got more by now (doubtful) I wouldnt be able to get it and pitch until tonight. I will just see how this goes Awesome. Thanks!

WLP 530, No signs of fermentation after 24 hours.

Looks like there is activity this morning. thin layer of bubbles over the top and bubbling in the airlock every couple of seconds. Took a good while, but ts going. So I shouldnt need to pitch any additional yeast?

WLP 530, No signs of fermentation after 24 hours.

Copy that. I'll give it a bit more time. Thanks

WLP 530, No signs of fermentation after 24 hours.

If it goes 48 hours with no reactions, should I simply purchase a second yeast and pitch that?

WLP 530, No signs of fermentation after 24 hours.

It was purchased from the refrigerator at a homebrew shop so I suspect it was well taken care of. OG was 1.084 When I was reading the back of the package it mentioned making a starter for higher gravity beers. I will definitely be looking into making these. I will check out those calculators!

WLP 530, No signs of fermentation after 24 hours.

The yeast wasn't old, it was made earlier this year. Said it was still good until October 23rd. I did not make a starter (haven't ever done so) I aerated the wort well. Its in a plastic fermenter so its tough to see any bubbles, but it doesn't look like there are any, and zero airlock...

WLP 530, No signs of fermentation after 24 hours.

Perhaps it's too early to tell, but I pitched yeast yesterday at around 4 pm and still no signs of fermentation at all. It has never taken this long to show any signs before. Temp 74 degrees White Labs WLP 530 Should I wait another day? Any suggestions?

When to add DME to your boil??

Just an approximation based on what other beers in this style I drink look like.

When to add DME to your boil??

This is the first time I have added DME so late in the process. so there is some definite trub in the hydro tube. I am only using eyes and the SRM scale reference inside the How to Brew book.
  14. Eric Wann

When to add DME to your boil??

Original Gravity around 1.084. Nowhere near the 7 SRM I was looking for.

When to add DME to your boil??

It is too late for this batch to limit the amount of extract I am boiling, but I can certainly mix in the rest at flame out and chill right away. Thanks yooper!

When to add DME to your boil??

Just referenced the "extract late" method from How to Brew. So its about half the extract for half the water during boil. Then at flame out add the rest and let pasteurize for 10-15. That may be the ticket. THANK YOU

When to add DME to your boil??

Definitely cut the flame when I am adding in all of my LME/DME/Sugar additions. I do slow adds and stir constantly. You aren't wrong. A beer can look amazing and taste awful. Flavor is certainly the top priority here. Still if I can get something in the 4-7 SRM range, that would be ideal for...

When to add DME to your boil??

I may be trying this with the DME. The guy at the homebrew shop told me that's a good time to add the candy sugar too.
  19. Eric Wann

When to add DME to your boil??

I think I will start with the LME, then add my 6 lbs. of DME towards the end. I am definitely looking for something more golden like a duvel.

When to add DME to your boil??

Original gravity of 83-86 It is a partial boil recipe. 2.5 gallon. I brew with Crystal Geyser bottled water. I'm leaning more towards adding the extracts later in the boil, but I definitely haven't looked into how to adjust the hops during the boil for that.
