    Popped the lid today and the krausen has finally dropped. Hydrometer reading is at 1.012 putting us at a solid 8.3% ABV. Sample tasted great too. Gonna rack onto about 10 lbs of cherries tomorrow!

    One week to reach final gravity?

    When you say you did it three times, you mean over the course of three days, right? If so, then yes it is entirely possible for fermentation to be complete in 8 days or less. It could probably use a week or two to condition and clean up a bit, but you certainly could go ahead and bottle/keg it...

    Considered taking a gravity reading on the Cherry Dubbel this weekend, but after popping the lid, I noticed the krausen was still hanging around pretty strong after two weeks. I will give it a few more days to see if it drops before taking my first post-fermentation SG reading.

    Sounds fine by me... I think we should all feel free to stray a little from Mosher's recipes as long as the beer is largely inspired by the original. Or if you want to go based strictly by the recipe, that's cool by me too!
