    Can I just keep the beer in the carboy?

    How would you get the beer out? And would you refrigerate it in the carboy? There's a fair amount of crap at the bottom of the carboy after a brew. And if you don't remove the beer you'll be drinking it too. I suppose you could rack to a secondary carboy and drink from that? But again...

    I wouldn't want to use a hand truck like that to get a sloshing carboy down the stairs. So your hot tub area is 3 levels above ground? I'm a basement fermenter, but mine is a walkout, so I have no troubles.

    I still like to hit breweries like that. But between lactose IPA's and pastry stouts, I try way less than I used to. Still fun to do, but I agree, it was more fun 10 years ago. (And I really like NEIPA's)

    My favorite style is a DIPA. But I like the sweeter resin-y kinds, like Hopslam. I also like the super bitter ones, but not quite as much.

    I started a batch over the weekend. My wife wasn't too keen on having to buy the 4.5 gallons of apple juice at Sams. But we'll see. I used brown sugar instead, and used an old brew bucket, as my fermentors were also being filled.

    Well I put some of these in the middle of my boil on Saturday, just a Pale Ale. Sure didn't smell or taste like much, so I'm guessing they'll add zero to the beer. The beer is fermenting now, so time will tell!

    I brewed this on Saturday. OG was a little low at 1.063. And I probably mashed a little high. But I've never had PTE so maybe I won't know any better? Either way, the warm, flat hydrometer sample was super bitter. I think in a good way?!?!
