    No Nonsense Stout

Nah, I'd call my treatment of the coffee "careless" I pulled off the airlock and rinsed it, refilled and replaced. The level inside the carboy had settled back down to where I had filled it to in the first place. I'll rerack this weekend and let it settle.

Went into ferm/guitar room today. Overwhelming coffee smell, because it had gurgled up into the airlock... Will this spell disaster?

Ok. Bottled. FG 1.014 (5.78%) I put the first gallon in secondary on 10 TBSP ground coffee. Will bottle it in a week or so.

Clarity-Ferm, Gluten Testing, and Gluten Sensitivity

One question that I don't recall seeing addressed anywhere... Do these clarifying agents still clarify a naturally GF beer?

    No Nonsense Stout

11 days in primary. Approx 8 second bubble interval. Holding around 66* F. Fridge nearly empty. 2 remaining BB GF ale half pints. A handful of those apple cider experiment bottles... A few different gallons of other cider experiments meandering along. Shoot. I might have to go buy something.

    Brewers Best Gluten Free Ale

70ish, maybe a little less. But some bottles stayed out of the fridge for nearly a month. I mean it's still a decent beer, IMO.

Clarity-Ferm, Gluten Testing, and Gluten Sensitivity

Awesome blog entry on ghostfish. ...now send me a 6-pack! Also, found out last night another member of the circle of friends has celiac. He had been GI discomfort since September, (and nearly lived off of Little Caesar's Hot-N-Ready) but the doc pinned down the diagnosis this week. The wife...

    Brewers Best Gluten Free Ale

I'd consider my batch of that to be rather low carbed too. I think I left mine in primary for 9 days (thanks work schedule!) and then bottled. Sat room temp before moving them to the fridge for 2 weeks. I moved them in groups do some bottles were bottle conditioning for almost a month. But I...

    No Nonsense Stout

Here we go.... This is currently sitting in the tub with the ice water bath cooling. I made a few alterations/mistakes... First, a double batch. I didn't roast the oats far enough. I ran out of time on roasting day. I didn't weigh out my hops specifically... I have not yet purchased a kitchen...

    You guys are sanitizing wrong!

I typically dunk a handful at a time, but I just got a squirt bottle before my last cleaning session, so I'm sure to squirt something. I dunk in a former tidy cats litter bucket, about 2.5 gallons at a time, and can dunk about a dozen bottles at once. The blue bottle is just water and for...

    New Beers Resolutions!

I just want to put more experience under my belt. I figure that as long as my primary is empty, I'm wasting it. One brew per month? *shrug* Increase storage hardware...

Pappy`s Pub Cider - Award Winner!

No water at all. Just the juice (drank its initial hydro reading, that was fine). Could it be I've stressed the yeast by high ABV? I don't have my calculations handy, but it's around where that yeast stops.

Pappy`s Pub Cider - Award Winner!

Racked the ginger version to secondary this evening. Hydro said 1.038... OG was 1.124. Work called me in so I couldn't rack the cinnamon. I will do that tomorrow, hopefully. Tasted it too. Ginger version certainly is gingery. Rather sweet, but has a slightly sulfury smell to it, although it...

Clarity-Ferm, Gluten Testing, and Gluten Sensitivity

So I was wandering around the Internet for various gf beer recipes and came across a rather large recipe database, with a variety of amphibian in their name. What I noticed is A LOT of the recipes labeled as GF by their OPs either used clarity ferm or a liquid yeast. This particular site...

    Bare bones cider series

Makes perfect sense to use AJC or sugar, but the fresh juice was already sitting there staring at me. Perhaps next time when I have better cognitive function I will do that. Thanks!

    Bare bones cider series

Perhaps this is more for "drunken ramblings" but I am drinking some of the cote des blancs simple cider, and it occurred to me, why not back sweeten on the fly? I have more juice, dumped the cider into my large glass, topped it off with regular juice. Makes a world of difference. Cheers!

    Bray's One Month Mead

After re-reading my last post, I realized that it probably came off as dismissing your advice entirely. This is not the case. But the gluten issue is what separates my wife from "wife" mode to "SWMBO" mode. I may go ahead and use the liquid yeast for the stuff for the friends, as they have no...

Pappy`s Pub Cider - Award Winner!

Checked on mine this morning, was started 13 days ago. The airlock has settled down, but I can still see bubbles in the liquid coming up. Looks like my work schedule will let me re-rack next Sunday night. The version with ginger syrup is in about the same spot, although it was done with...
