    Eating ham. Raw ham.

Well, with an endorsement like that I'll have to give it a shot.

    Eating ham. Raw ham.

Cool, and Smithfield is just 30 minutes down the road!

    Eating ham. Raw ham.

I think you've hit on the biggest concern. I'll be looking for a ham aged 8 months min, preferably 12.

    Band of Brothers

Damn, I better hit the bricks!

Czech Premium Pale Lager Denny's Evil Czech Pilsner (well not really evil..)

    Hmmm...could be interesting for Oktoberfest/Bocks.

    Eating ham. Raw ham.

Dry cured, of course  I'm totally obsessed with serrano/Iberico ham from Spain which is basically prosciutto but better if you're not familiar with it. It's a bit saltier which works for a Southern boy raised on country hams. However, I'm not exactly obsessed with the price tag of...

Looks good...I can see I'm going to have to try the S-23 one day.

    Brewing "slumps?"

I consider myself in a permanent slump with flashes of good beer ;) One thing to consider is that you may be a victim of your own increasing skills. I know I thought my first several batches were the cat's meow, but if I brewed them now I'd be pretty pissed. As you get better at brewing your...

    Band of Brothers

Man, I wish I hadn't been so busy lately and had seen this. I note they have it for $52 now, which is still reasonable, but now I want it for $40!

    Farmhouse / Saison

As long as this is bumped up, I should comment on the VSS Farmhouse yeast: they aren't lying when they say it likes it hot! I had pretty vigorous fermentation for a few days @80-85F and then it quit. I didn't take an SG reading, but just assumed it had fermented fast at those temps, and left...

    Rate this Weizenbock Recipe

That's what a decoction can do for efficiency (leaving aside the argument of whether or not it's worth the time to get the efficiency). I'm curious to hear how it turns out since biscuit and aromatic are more commonly seen in Belgian beers but should be an interesting addition if you're really...

3rd all grain done, and first Decoction mash

    That decoction looks delicious.

What do HBT Dads want out there for Father's Day?

I think I'm going to try to brew an Oktoberfest for F-day. Material giftage will probably take the form of a seatcover for the truck.

Visiting Duck/Nags Head Area NC. Any breweries?

There is Outer Banks Brewing Station which I've sampled a couple times and thought were overall decent. I think they have a few brewpubs on the Outer Banks and one brewery location, but I don't recall where exactly. You'll be close to Roanoke Island so I would check out The Weeping Radish in...

    figs?

I have figs, as well, and while I've never made anything alcoholic with them I have seen recipes for fig wine.

    Help

Make sure the pail has water or sanitizer in it. Other than that, you've done what you can do besides wait it out! Be happy that your yeast are happy.
