    Sounds like US-05. Tell him to be patient and it will drop eventually. Sometimes swirling the fermenter gently helps too.

    I'm with BigEd. Single infusion at 152. I wouldn't even bother with the mash out. With a 3 gallon batch size, by the time you screwed around with it you'd be at, or very close to, a boil and the enzymes would be long gone.

    The best pickled eggs I have ever tasted were done by dropping the boiled and peeled eggs in the juice from home grown pickled beets with red onions. We also save the juice from pickled jalapenos and use that.

    4 gallon kettle BIAB

    For BIAB you should have a kettle that's twice your batch size. A bit bigger is even better. I use a 14 gallon kettle and do 5.5 gallon batches.

    Easiest and cheapest way is to do a starter for one batch and harvest yeast from it to use in the second batch. If you do this you'll only be using about 1/4 of the harvested yeast and can save the remainder for future batches.
