    Pitching at 80 F is too high, it`s best to pitch right at fermentation temps. If I`m going to ferment at 67 I pitch at 67, less yeast stress that way which translates to less weird flavors,alcohols and better beer.

    In theory you can over pitch, but I`ve never had a problem with it.

    In my experience dry yeast takes off faster than liquid if you don't make a starter. With a proper size starter I`ve found that liquid yeast will take off very fast.....your mileage may very. ;)

    when pitching yeast from a flask

    I just wipe the neck around the stopper with a rag dipped in sanitizer, pull the stopper and pitch away....no worries. :mug:

    Welcome to the forum, I don't post much but do lurk a lot. :) I live in Wasilla right now, but I`ve also lived in Kodiak and a few other places...shipping is expensive anywhere your located up here it seems. At least there`s a home brew shop in Anchorage. Have fun with the hobby. :mug:

    I dont crash cool if I`m bottling a beer, only with kegs. The beer goes through a mini fermentation in the bottle and will clear on its own in time. Time in the bottle will clear your beer.     I`ve played around with different times in the primary and secondary, and basically came to the conclusion that what works best for me is ten days primary, ten days secondary, then crash cool and keg or bottle. I only leave big beers in the primary longer -up to three weeks- and secondary...

    I use a 6 or 6.5 for the primary, sometimes I need a blow off tube but usually an airlock is sufficient. I only use 5 gallon carboys for the secondary because less head space is desirable in that case. Either way it will work but why use a 5 and waste the beer. Hop resins, dead yeast and other...

    I`ve used stuff from the previous year before. As a matter of fact I brewed some Porter yesterday with last years Two-Row...never had a problem. :)
