    Infection, or vodka?

I sanitized 4oz of cocoa nibs and one vanilla bean in a few ounces of vodka (just enough to soak up all the contents), then added everything to the secondary. Its been about 5 days and the top is starting to look a little white. I'm sure this is not too much to worry about. Has anyone seen...

Cold brew coffee the only option?

Sounds pretty easy. I'll go this route, thanks

Cold brew coffee the only option?

I was originally going to add about 16oz of cold brew coffee into the bottling bucket for my stout, but what would be the downside of just adding regular coffee instead? I work at a restaurant, I was thinking I could just brew some fresh coffee from our machine and keep it in a sanitized...

Favorite method for adding coffee to Porter?

I was originally going to add about 16oz of cold brew coffee into the bottling bucket for my stout, but what would be the downside of just adding cooled coffee into the bottling bucket? I work at a restaurant, I was thinking I could just brew some fresh coffee from our machine and keep it in...

Can keeping IPA in primary 4 weeks correct high ferm temps?

Haha, okay. I was going to dry hop with about .5 oz of Amarillo and .5 oz of Citra. Would you recommend more for a 3 gallon batch? I boiled with about 1.8-2 ounces of hops

Can keeping IPA in primary 4 weeks correct high ferm temps?

I brewed an IPA on Tuesday, gravity 1.070. Pitched Safale US 05 without rehydrating (3 gallon batch) My closet has been cool for the most part but the strip on the fermenter has been reading around 74 degrees since the start of fermentation. Safale 05 ferments up to 75 degrees but I know...

Should I use stored DME/LME for this brew?

Caribou Slobber extract kit came with my Northern Brewer starter set a couple of months ago. I didn't want to brew a brown ale so I left the DME and LME unopened in the box and I put the yeast and hops in my fridge. The malt extract has been sitting at room temperature for about 2 and 1/2...

    Storing LME ?

I've been storing containers of LME at room temperature. I've had some laying around for a Brown Ale that I'm going to brew in a few weeks. Its been laying around for over two months now. Should I switch it to the fridge or discard it?

    Yeast Starter Hiccups

I've done three batches with dry yeast and did a yeast starter each time. I'm going to rehydrate instead of doing a starter on my next batch. I honestly thought that doing a starter was basically a 2 in 1 hydration step.

Why can't you do a starter with dry yeast?

Thank you, I'm very pleased to hear the positive responses! I soaked the oak in makers mark for two weeks.

    Infection!? Before and after pics

I brewed a bourbon barrel porter extract kit. I had it in the primary for three weeks. It tasted great when I transferred to the secondary. After transferring I noticed tiny bubbles. I asked a friend and he confirmed that it was nothing. After adding the oak, bourbon, and vanilla beans, I...

    Getting OCD, cleaning & sanitizing!

I brewed three extract kits so far and my OCD when it comes to cleaning and sanitizing has gotten more severe with each batch. It took me approximately 2 and a 1/2 hours the other night to transfer a beer to a secondary! Can anyone share some tips or advice to make the cleaning/sanitizing...

Gravity reading off by 50 pts and I have no idea why!

I took the gravity reading right after the wort cooled to 70 degrees, before putting it in the fermenter.

Gravity reading off by 50 pts and I have no idea why!

Thank you for your responses! I probably should have posted on here before taking my friend's advice. I did take a sample from the top of the wort which is probably what caused the low gravity reading. I suspected that the gravity was low anyhow because fermentation activity was only visible...

Gravity reading off by 50 pts and I have no idea why!

I brewed my third extract kit last week---Northern Brewer Imperial Stout. OG was supposed to be 1.086. I'm not sure if I'm missing something here, I usually take a gravity reading after the wort cools to 70 degrees (right before pouring into the fermenter) When I took the gravity reading I...

What is the shortest amount of time I should wait before trying a bottled beer?

I tried my first home-brew, an American Pale Ale, after 8 days in the bottle and I was a little disappointed. There was a lot of bitter citrus notes present and also some sweetness, which I was happy about. What I was not happy about was some off the off tastes. The beer did not taste like it...

Need help with first brew...secondary fermentation

I followed a pretty simple guideline for making a starter--1/2 cup of DME + 2 cups of water. I shook it up in the flask a couple of times to get it going. Not sure if thats common practice. For my first batch I accidentally measured 3/4 cups of DME to 2 cups of water. When I shook it up it...

Need help with first brew...secondary fermentation

Hmm three piece cylinder airlock...I'll have to check that out! A homebrewer can even customize his/her airlocks. Pretty cool... Those are hops at the top. I added 2oz in a mesh bag and submerged it in the beer.
