    I would suggest putting some sanitized foil loosely over the top instead of a towel.

    I used it for a honey wit. I added it at 5 min. But you could also do it at flame out. The key is to add more than you think you need, especially with an IPA, because it will be over powered by the hops.

    Belgian Wit Yeast Question/Problem

    I brewed a Belgian wit a couple weeks ago. It started bubbling after like 12 hours, but didn't pick up until at least 72 hours. I wouldn't worry about it too much. If you still aren't seeing any signs of fermentation (e.g. Bubbling, krausen) you can always just aerate again and pitch more yeast...

    how did you choose recipes when you first started brewing beer?

    There are great recipes on HBT. I usually look at the recipe on here and then take a look at hopville do see what the basics of a given beer are. Then I go to my LHBS and see what they have. Also, check out the jamil show podcast, he gives basic recipes for every type of beer. I hope that helps...

    Thanks a bunch. I actually went with the nibs. They are soaking in rum as we speak. Next time I will try that approach with the powder. Thanks for the help!

    I saw some ppl adde cocoa nibs. How did that work out for you? I am planning on soaking 8 oz of nibs I picked up at whole foods in some vanilla rum I got from a distillery while I was on vacation in Mauritius, and then tossing them in the fermenter for a week before I bottle.

    what should i dry hop my Belgian wheat IPA with??

    I just dry hopped a similar beer with Galaxy hops and I was very happy. They have a nice crisp hoppiness that is not overpowering. I think I used Australian Galaxy.
