    I would do what your LHBS said. Add and taste, add and taste until you like where it's at. There's no set amount that will get what you're looking for. Only you can determine the amount of flavor you want.

    When to bottle - too soon?

    Take your time with stouts. The longer in the fermenter, longer in the bottles before you drink it is better. Though, I can attest, patience is hard to come by.

    I would use light LME and DME and steep with dark grains. All dark grains is going to create a heavy, syruppy, sweet thing. It will be beer, but probably not what you're trying to make.

    Going for citrus/tropical, Mosaic and Citra would be my choices out of that list as well. I've never tried Azzaca either, let us know what you decide and how it turns out.

    I would try and shoot the brewery/ head brewer an email and see if he responds. Some will respond and get you on the right track with the grains and hop schedule.

    Did you use normal bottles or short bottles (Sierra Nevada)? I've made an IPA before and bottled half in tall and half in short to see if there was any difference and the short bottles were much less carbonated.

    I would get another 3lb. of dark or else it might be pretty light. 9 lbs. of malt would make it a reasonable porter/stout with those hops. You could also buy a bag of chocolate grain to steep for some added flavor.

    I've made a similar stout with vanilla in the secondary. I'd say wait until after the fermentation to transfer it, then let it sit a while in the secondary as well. The longer the better with stouts.
