    Stupid move...forgot about 2/3's of priming sugar

    I would doubt you would need 2 seed mats to heat your insulated freezer to low 60s. If you did, a power strip should work fine. I just took apart my Johnson A19 for the first time to make it heat, and am using one of the seed mats. That thing heated it up 10 deg pretty fast!

    Maybe you need to reed the link I just posted. The heavy and late hops he added in addition to wheat etc. are a possible cause of the head retention concerns in OP last post.

    I think I would push Stout to ship me a new tank, and send yours back. What is freight that much on these? Frankly, that bottom weld looks like a really crappy uneven, rough weld, let alone the leaky ones. Don't they warranty these tanks?

    That's wrong. Don't go giving OP the wrong info with your smiley. You always put the sanitizer a little above the brew level. After you suck down a whole carboy with krausen going down hill you may begin to understand the concept of siphon in this case.

    There's a reason people started paying attention to sanitation. Getting lucky and avoiding an infected batch with poor habits wasn't one of them. In the Middle Ages they would fling their crap out onto the street because that's just what they did. The Black Plague, and all that.

    That's a lot of other grains, all of which are contributing to your head retention. Not sure why you feel the need to add wheat, oats, and rye to your ipa. Other than the rye, I think I'd ditch the others completely, and up the pale. Maybe throw in 8 oz crystal, and even a smidge of Carafa II...

    At this late stage, no. Next time, don't add water, add some oats or a little chocolate wheat to your recipe. Then mash hotter, 156 F.
