Full boil for NB Dundalk Irish Heavy kit

I recently received the Dundalk Irish Heavy kit as an early birthday present and am planning on brewing this Sunday. Even though the instructions are for a partial boil, would I be able to do a full boil with the supplied ingredients?

    Joe's Ancient Orange Mead

Just bottled my first batch of this tonight! I used a Cara Cara orange which has given this a very nice sweet orange taste. It's absolutely crystal clear! Followed the directions as stated and ha no problems. OG was 1.130 and it finished at 1.030. Enjoying the last bit that didn't make it...

    Joe's Ancient Orange Mead

Here's my version of JAOM. Left it to cool overnight and it got down to 65*. According to the recipe, temp range is 70* - 80*. I have it on my counter warming up. Should I wait or go ahead and pitch? Is that too cool for bread yeast? I'm using Red Star yeast (no Flieshman's on hand)...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Will try this next time (and there will be a next time!). Normally I rack the wort on top of the sugar. I assumed that the wort and sugar would mix evenly as the bucket filled. Guess it couldn't hurt to give it an extra stir just in case.

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Brewed up a partial boil recipe I found on an earlier post for the in-laws, and it was a hit! I do have one question. I used 4oz of corn sugar to carbonate and bottled on 12/12/11 and I'm getting bottles where some are carbonated just fine and others are coming out flat. Any ideas?? I used...

    Adding sugar pre-fermentation

That's my plan :D Going to check on Saturday. I may have to check and see if WF sells their organic juice in smaller containers. I'm thinking about backsweetening with some of the same juice that I used. Perhaps a cup per gallon, just enough to give it a hint of apple. Question...

    Adding sugar pre-fermentation

Check my gravites last night. The one with no sugar came in at 1.012, while the one with sugar was 1.010. That's around 4.9% and 5.9% respectively, assuming the same formula for calculating ABV for beer applies. Both were rather fizzy as I poured the samples. Not much of an apple taste but a...

    Adding sugar pre-fermentation

Dert: I noticed that my stoppers weren't staying in place, so I added the foil to try and keep them from moving. So far they're holding!

    Simple cider from store-bought juice

I just recently started my first batch of cider using store bought juice. I used 2 gallons of Whole Food's 100% Apple Juice and split a packet of Safale-04 between the two. The one on the left I just pitched the yeast and it had an OG of 1.049. The other has 1/4 cup dark brown sugar added and...

    Adding sugar pre-fermentation

Well I finally did it! I used 2 gallons of Whole Food's Organic Apple Juice and one packet of Safale-04 split between the two. The jug on the left has only the yeast added, OG of 1.049. The one on the right has a 1/4 cup dark brown sugar added, OG of 1.055. Will post more as things progress...

    Tangy aftertaste

I brewed an AHS Cream Ale kit earlier this year that had the "twang" in it, but I did add all of the extract at the beginning. I will have to try adding it later next time. Any suggestions on when and what ammount? As for the fermentation temps, I put my carboy in a big bucket with water that...

    Tangy aftertaste

Subscribing to this thread. I would love to hear the answer to this too. My brews thus far have been extract with steeping grains. I try to keep the fermentation temp between 68* and 72*, but have had a few spikes to 78*. I'm also careful with minimizing any splashing and I'm exceptionally...

    Hello from Michigan

I'm travelling to the Port Huron area next week. Any suggestions on local or regional beers I should get my hands on? Also, has anyone been to Quay St. Brewing Co. & Restaurant?

    Help with refractometer reading

I need a little help deciphering a refractometer reading. My current batch is a Brewer's Best Belgian Tripel kit. Before I pitched, the reading was 1.080 (was supposed to be 1.083). When I transferred to secondary it was 1.043, and today it's still sitting at 1.043. I know the reading isn't...

    Cider Bottling Question

That's what worries me. I guess if I had to I could use some plastic twist-ties to anchor them to the sides of the rack. I'll be doing my first test batches next month (2 1 gal. batches using Whole Foods 365 cider, one as-is and the other with 1/4 cup brown sugar) and exploding bottles are...

Breweris or brewpubs to visit in Port Huron, MI area

My wife and I are planning a visit to Port Huron, MI this July (with a possible jaunt over the border to Canada), and I was wondering if anyone knew of some great local or regional beer we should try or brewpubs/breweries we should visit. I did come across Quay Street Brewing Co. in my online...
